(here is Mr. Gudrun calling:) Yes! A Mongrel would be my favourite. (a mix of every breed)
We call it in german "Promenadenmischung" . They become older, they are healthier, they are tougher and most of them are more intelligent.
...and by the way: a better description for "Paula's" breed is: a french model lookalike with anorexia and a body building butt. (sorry, but I don't like endorphin-junkies) another reason: I think, I'm too old for a greyhound. I prefer dogs, that behave like dogs (i.e. laughing with the tail etc.)

I get where you're coming from
We have three dogs, an English Setter, a Border Collie and a Jack Russell cross Plumber Terrier. They all have really different personalities and you need to be sure to have a dog that you can get along with, if you get my meaning

I don't recommend an English Setter to anyone.
The one we have,Biscuit, is very lovable but he is too laid back.
Think Dylan from the Magic Roundabout and your'e very close.
You have a major job to get him to do anything. He's like a cat in a dogs body.
The other two we have keep us on our toes constantly.
